Fish gratin with leeks

400 g of leeks

1 dl of lively white wine

1.5 dl of broth

180 g of semi-fat sour cream

180 g of crème fraîche

1 bunch of dill

700 g of flounder fillets

125 g of freshwater shrimp

How to proceed

Preheat the oven to 180 ° C. Grease a baking dish. Cut the leeks into rings and sauté them in the remaining butter for 5-10 minutes. Season with salt and pepper. Deglaze with the white wine. Add the broth, semi-fat cream and crème fraîche and simmer until the sauce binds a little. Season with salt and pepper.

Chop the dill and mix half of it with the leek sauce. Pour half of the sauce into the pan. Rinse the flounder fillets and dry them with kitchen paper. Season them with a pinch of salt. Distribute half of the fillets and shrimp in the pan. Pour in the remaining sauce and add the remaining fish and shrimp. Bake in the center of the oven for approx. 30 minutes. Remove from the oven, distribute the remaining dill on the gratin and serve.
